His education continued at the art school in Nuremberg, where he was taught by Albert Christoph Reindel and August von Kreling. Seeking to expand his skills in color representation, he later moved to Munich to serve as an assistant to the painter Gisbert Flüggen. Seitz eventually became associated with the Munich School, a period during which he was recognized as a leading small-scale painter.
His artistic output is characterized by a delicate interplay of light and shadow, often featuring humorous depictions of everyday life. His subjects frequently focused on the lives of ordinary people. Notable works include:
Throughout his career, Seitz received several honors, including being named an honorary member of the Munich Academy of Fine Arts in 1876. He was also awarded gold medals in Munich and Vienna and was a Knight of the Bavarian Order of St. Michael. Beyond his professional achievements, he was a patron of the arts and a benefactor in his hometown of Roth, where he built a villa and was granted honorary citizenship. He died in Munich following a fall on a staircase.
